Dolcetto may be considered a humble grape, but for the Cellario family, it’s pure joy in a glass. It’s their favorite variety, and the reason they proudly call themselves the Dolcetto Gang—a playful badge of honor for a grape that deserves more love.
In the glass, ‘Duzat’ is bright and juicy, bursting with strawberry, red cherry, and even a cheeky hint of bubblegum, grounded by a subtle forest floor earthiness. Viticulture: Grapes grown at an altitude of 400m with limstone soil. Hand-harvested
Winemaking: Half pressed and half whole grapes, destemmed, simulating the crushed by feet method used by our ancestors. Semi-carbonic maceration to enhance the Dolcetto fruit and have a light wine with soft and silky tannins. It’s aged for a few months in concrete tanks, and it goes well with any type of food.
Fausto and Cinzia Cellario are third-generation winemakers from Carrù, a small village on the western edge of the Langhe hills. They focus on local Piedmontese grapes and are passionate about keeping traditions alive, both in the vineyards and the cellar. The family farms 13 hectares of vines, along with a few hazelnut trees, across three sites in the southern Langhe, with their prized Dogliani plot making them proud “Dolcetto Specialists.” Their approach is simple and natural, having everything farmed organically and dry-farmed, harvested by hand in small bins, fermented with native yeasts, and made with little to no sulphur — only when really needed. The wines are never fined or filtered and age in big neutral oak barrels, concrete tanks, or raw amphora.
They grow Dolcetto, Barbera, Nebbiolo, Favorita, Nascetta, and Grignolino, plus a splash of Pinot Noir for fun. At the heart of it, the Cellarios make honest, characterful wines that reflect their land — and are exactly the kind of bottles they love to drink themselves.
