2021 Riesling
This wine is exceptionally high acid, akin to sucking on a sour candy. Very tart, in fact you might feel lightning sprites on the tip of your tongue. Lime is the dominant fruit, featuring its sharp citrus taste and its bitter rind, inhibiting greatly whatever tannins are present. Light-bodied and dry, this makes a refreshing Riesling for the summer.
Suitable for vegans and vegetarians.

Quality Time: Serve fridge cold (6°C). At a summer lunch or dinner with the people you feel the most yourself. The wine's high acidity would pair well with fried food like fritto misto and equally sour, but light dishes like Kilawing Tuna sa Gata.

Viticulture: Organic. Biodynamic. Handpicked grapes. Farmed on clay, limestone, and sandstone soil.
Winemaking: 50% of grapes pressed directly, 50% five weeks on the skins. Aged in 1200L wooden barrels. Unfiltered and bottled without the addition of sulphur.

They manage 16 hectares of Demeter-certified biodynamic vineyards from which they craft wines full of life and freshness. Their 'Natur' range is a testament to their commitment to low-intervention winemaking, with zero added sulfur, and all their wines are unfiltered, unfined, and reflect their personality and creativity. Their approach to winemaking, learned from renowned Alsace vigneron Patrick Meyer, demonstrates their dedication to harmony with nature and offers a remarkable range of flavors, from light to complex and serious, even including some exciting ciders for a playful twist.
